The rig is far more important than the hull, when my girls sailed we upgraded the rig first, then eventually had a hull built and moved the upgraded rig onto it, selling the old hull and original rig.
This worked out cheaper for us as it was done over a couple of years, and we finished and fitted out the hull ourselves.
There is no reason you could not take this approach today and eventually buy a Winder hull if you prefer the plastic option.
