On a dinghy with a centre mainsheet, the correct way to hold the tiller extension and mainsheet is with a "dagger" grip as shown in these photos of 2016 gold medellists Hanna Mills and Saskia Clarke and 2012 gold medellist Sir Ben Ainslie. You should also have your hands in front of you, close together, so one hand can help the other when you are pulling in, or letting out, the mainsheet.

So 'sail like a squirrel' or 'be like a hamster' as per this RYA video.
